Leaf Sauce, Sweet Potato

Intro

Sweet potato leaf sauce is an earthy, nutritious sauce that accompanies rice. Other neutral, soft leaves can be substituted if you can’t find sweet potato leaves.

 

Ingredients
  • 1/2 cup palm oil or plain vegetable oil
  • 1.5 cups bunches sweet potato leaves, cut finely
  • 1 med onion chopped
  • 1/2 cup palm oil or plain vegetable oil
  • salt, to taste
  • piment, to taste
  • 2 1/2 heaping spoonfuls of dried, pounded, or cooked fish or beef
  • 1 large maggi cube
Directions

Step 1

Cut up the leaves by rolling them into a long cigar shape and cutting crosswise, or buy them already cut. 

Step 2

Heat the palm oil in a pot until just before it starts to smoke. Saute the onion until translucent.  

Step 3

Start adding handfuls of leaves into the pot, stirring and letting each handful cook down a minute or two. Pour in enough water to cover the leaves by two inches.

Step 4

Add piment and bring the sauce to a rolling boil. Add fish or beef, and stir in. 

Step 5

Boil until no water is left on the surface, just a layer of oil. There will be lots of little bubbles, but not the large bubbles as with water as in a rolling boil. Stir often at the end. 

Step 6

Serve over rice.
